Domaine La Sarabande was establish so that Paul and Isla Gordon could fulfil their dream of making, serious, long living, robust wines. the vineyards are farmed organically and the grapes are hand harvested, naturally fermented and unfined and unfiltered at bottling. Bousigue is a blend of 80% Mourvedre and 20% Syrah, due to how difficult Mourvedre can be to ripen fully this wine is only produced in the vineyards best growing years. the wine is rich and mouth filing with wild thyme, dark concentrated fruits and gamey, charcuterie meat characteristics. The finish is exceptionally long, with well balanced tannins and acidity. Pairs perfectly with pork loin marinated in olive oil and thyme cooked over an open flame on the BBQ.
