Los Peperetes’ lightly cooked cod is soft, flaky and gently meaty, sitting in a deeply savoury family-recipe sauce made with paprika, tomato, garlic, olive oil and warming spices. The flavours are rich but beautifully balanced – smoky sweetness from the paprika, gentle acidity from the tomato and a mellow garlic depth that never overwhelms the delicate cod. Los Peperetes is a small, highly respected cannery based in Galicia, founded in 1993 by Jesús Lorenzo Crespo, the grandson of one of the region’s first canners. The name ‘Peperetes’ is a Galician word for tasty, desirable and surprising delicacies – and that sums up their approach perfectly.
They work exclusively with local suppliers and follow a completely manual production process, using artisanal techniques and family recipes passed down through generations. Every tin is prepared by hand, with care and precision, ensuring the flavour, texture and integrity of the ingredients are always front and centre.
