Santé Languedoc: Four New Wines We're Pouring by the Glass from 23 October

Fresh glasses, same Languedoc. We've swapped the whole by-the-glass line-up for the second half of the run, and there are four new wines to enjoy: two from Domaine Gayda and two from Domaine de la Dourbie.

If you missed the first four, they're in our first by-the-glass post. And if you want the bigger picture on why we're backing this part of France, start here.

These are on at our bars in West Didsbury, Manchester, Altrincham and Macclesfield from 23 October until 19 November.

On from 23 October: two whites, two reds

A pair of wines from each producer, one white and one red. Pop into any of our wine bars to taste your way through them.

Domaine Gayda, Figure Libre Freestyle Blanc 2023, from £8 per 125ml glass.

Vibrant, with lime blossom and white peach.

Bright and lively, with lime blossom for the floral lift and ripe white peach for the fruit. It's four white grapes in one bottle: Grenache Blanc, Macabeu, Marsanne and Viognier, from IGP Pays d'Oc. Part of it is made in a concrete egg and part in oak barrels, then it sits on its lees for twelve months. If you usually order Sauvignon Blanc and fancy something a bit different, start here. It's good with seared scallops or roast pork with fennel.

Gayda began in 2003 on old sunflower fields at Brugairolles, near Limoux, the same year Reserve Wines did. The founders flew to Cape Town to find a winemaker and came back with Vincent Chansault, a Loire-born winemaker who'd been working at Boekenhoutskloof. The estate has been certified organic since 2011. "Figure Libre" is what they call the wines where they ignore the appellation rules and do what they like.

La Dourbie, Marius Blanc 2024, from £9.50 per 125ml glass.

Lemon curd, honeysuckle and toasted almond.

Lemon curd for the rich citrus fruit, honeysuckle for the flowers and toasted almond for a nutty, savoury edge. It's mostly Terret Blanc, with Grenache Gris, from the Hérault. You've probably never had a wine made from Terret. In 1958 there were around 15,000 hectares of it in France. Today, all three colours of the grape together come to under 1,000. It buds late, so it escapes the frost, and it copes with drought, which is handy in a warming Languedoc. It works with grilled asparagus, linguine with clams or a simple piece of fish.

La Dourbie has been going since 1781 and takes its name from the little river that runs through the vineyard into the Hérault. The Serin family bought it in 2003 and the vineyards have been organic since 2009.

Domaine Gayda, Figure Libre Freestyle Rouge 2024, from £8 per 125ml glass.

Bramble, dark cherry and pepper.

Syrah, Grenache, Mourvèdre and Carignan from IGP Pays d'Oc, with the fruit coming off limestone at La Livinière in the Minervois. The grapes go into the tanks by gravity, and no sulphur is added during fermentation. The finished wine has just 47mg of sulphur per litre. It then spends nine months in older barrels. In the glass it's dark fruit all the way: ripe bramble and dark cherry, with a kick of pepper running through it. Try it with grilled lamb chops, a charcuterie board, or roasted vegetables with rosemary and thyme if you'd rather skip the meat.

Vincent Chansault has made Gayda's wines since the start. Asked about his approach, he's said: "I don't want to be told how to make wine." That's exactly what Figure Libre is for.

La Dourbie, Marius Rouge 2023, from £10 per 125ml glass.

Full-bodied, with fruits, herbs and plenty of complexity.

A big, full-bodied red with ripe fruit and herbal notes, and enough layers to keep you interested. Cinsault leads, with Grenache and Syrah behind it, from the Hérault. It's blended and aged for ten months in a wooden foudre. It's good with duck breast and figs, a tomato pasta or anything off the barbecue.

There are beehives beside the vineyards at La Dourbie and a century-old ornamental park on the property. The estate is run by Bernard Serin and his son Nicolas.
