This is a fabulous natural wine from Alsace. Super fresh, dry and quite spicy on the nose with beautiful citrus fruits, white flowers and amazing energy (we'd guess a mixture of pronounced fruitiness and acidity working together with good intensity that gives you a good hit of pleasure). On the palate there's harmonious notes of juicy peach and citrus zest mingle with a lively acidity, offering a refreshing and elegant taste experience. It’s worth anyone’s time, natural wine fiend or not.
Try this with a vegetarian Poké bowl or some grilled fish.
"Achillée is a sustainable, project that's been Organic since the 90's and really goes for the minimal intervention winemaking approach. We love this blend that a touch of skin contact. It has nice aromatics as you'd expect with a touch of spice and pithy texture. I'd enjoy this with a grilled mackerel."
Achillée's entire vineyard has been organically farmed for over twenty years and biodynamic since 2003. Scattered throughout central Alsace, their grapes benefit from the best care from their fabulous team. The very varied terroir is made up of gravel, sandstone, clay, granite and shale. The diversity of their vineyard, enhanced by a large amount of manual work and non-interventionist vinification, allows for great typicity in the wines. They vinify all Alsatian grape varieties naturally, Riesling, Pinot Gris, Pinot Noir, Pinot Blanc, Gewurztraminer, Sylvaner, Muscat, exclusively with native yeasts and without any input during fermentation.
For the Pepin range they work with growers in other areas of France as well as the Alsace, they will use some older cuvees as well as the most recent juice each time.
A blend of Muscat, Riesling, Gewurztraminer, Pinot Blanc and Pinot Gris. No added sulfur.
