Chablis is Burgundy's most northerly appellation, producing some of the world's most distinctive Chardonnay. Grown on ancient Kimmeridgian limestone soils, these wines are defined by their crisp acidity, stony minerality and restrained fruit - a world apart from the richer, oaked Chardonnays of the Côte de Beaune.
