Tasting Note

No grape tells the story of Argentina’s wine history better than Criolla Chica. Brought to South America by missionaries 500 years ago, this grape was neglected for centuries, recently, winemakers like Pancho Lavaque have embraced Criolla Chica's potential. This wine is bursting with energy and red fruit tension, rasping wild raspberry acidity and fruit flavour. Fermented with wild yeasts, nothing is added. Aged for 6 months in a concrete vats and old French barrels, it’s a pure, historical expression in every glass.

This is very versatile with food, enjoy it with moussaka, lasagna or paella.

The Salta region in Argentina is traditionally known for bold, heavy wines. Breaking from the mould, Vallisto Winemaker Pancho is crafting delicate, aromatic wines with remarkable elegance and freshness, a rarity for this high-altitude region. He embraces experimentation, unafraid to fail, while honoring the region's rich vineyard heritage.

"Vallisto" refers to someone from the Cafayate Valley, and this project focuses on showcasing the unique terroirs of this remote Argentine area. It also revives forgotten vineyards and lesser-known grape varieties, blending youthful innovation with ancient natural resources. Pancho and his team are producing elegant, complex wines from old vines, light in extraction but rich in flavor.
