A striking bottle of Sparkling wine that is the result of a collaboration between Vallformosa and top chefs and sommeliers from Barcelona and Paris to create a tribute the fishermen and chefs who live and work in the Bay of Cadiz to sustainably provide the celebrated regional delicacy of wild blue fin tuna. Pop the cork and you'll find a wine that is pale yellow with greenish hints. In the glass it is fruity with crisp apple as well as pear, citrus and hints of anise. The palate is soft and creamy with delicate bubbles and subtle pastry and nutty hints leading to a long refreshing finish.
Ideal with wild red tuna but also versatile with many fish dishes and a delicious aperitif on its own.

Based in the Penedés Denomination of Origin which has a great diversity of microclimates, a consequence of its proximity to the coast and its altitude. The climate is typically Mediterranean, i.e. mild and warm.
Grapes are collected via a mix of manual and mechanical harvesting, soft pressed with pneumatic presses, extracting the must and leaving it to settle for 24 hours at 10 degrees, followed by alcoholic fermentation and a period of ageing before release.
