A blend of Pinot Blanc, Chardonnay and Auxerrois which had around 4 day skin contact before being fermented in Qvevri and left for 6 months before a second period of ageing in Burgundy barrels. Lots of lemongrass and lime citrus fruit with a touch of melon, pithy texture and a refreshing strak of acidity.
