Paolo Leo is a fifth-generation family winery based in San Donaci in the heart of Puglia, southern Italy. With roots dating back to the early 20th century, the estate has grown into a modern and highly respected producer, focusing on indigenous varieties like Nero di Troia, Primitivo, and Negroamaro. Their vineyards benefit from the warm Mediterranean climate and coastal influences, allowing them to craft expressive Italian red wines that balance ripeness with freshness. Sustainability and quality are central to their philosophy, supported by ongoing investment in both vineyard and winery.

How it’s made:

  • Varieties: 100% Nero di Troia
  • Harvested at optimal ripeness to balance rich fruit and natural acidity
  • Grapes are destemmed and undergo controlled maceration for colour and flavour extraction
  • Fermentation with selected yeasts at 22–24°C followed by malolactic fermentation
  • Aged for 3 months in stainless steel to preserve fruit purity and freshness
