Get to know: Libre Y Salvaje Camino del Bosque

A deep, dark Spanish red wine from D.O. Cariñena in Aragón, made in one of the region's oldest and wildest cellars.

Tasting Note

Toffee, clove and violet lead the nose, followed by dried black cherry, blackberry and plum. Underneath sits something more savoury: cedar, old wood, a touch of eucalyptus and fig give it real depth. On the palate it's medium to full-bodied, with a bold, sweet fruit core held in check by ripe tannins and a food-friendly streak of acidity. The finish runs long. Malbec drinkers will find plenty to love here too.

Top food pairings:

  • Rump steak, cooked simply so the wine can do the work
  • Lamb tagine, for something warmer and spiced
  • A mushroom and lentil ragu, for a plant-based match with the same depth

Libre y Salvaje, meaning "free and wild", works out of a centuries-old winery in Almonacid de la Sierra, in the Algairén mountain range within D.O. Cariñena. The cellar runs on gravity across four levels, with next to no mechanical intervention, letting old vines and native varieties do most of the talking. Vineyards sit at altitude and are farmed organically and regeneratively, many of them abandoned plots the winery has brought back into use. Wines are aged in a mixture of wooden foudre, stainless steel, concrete and big clay jars, resting in caves cut into the hillside.

How it's made:

  • Varieties: 60% Grenache, 40% Carignan
  • Vines aged between 35 and 60 years, grown on stony, alluvial soils with red clay and silt
  • Hand-harvested, with bunches selected in the field
  • Aged for 14 months across wooden vats, concrete tanks, French oak barrels and clay jars in the winery's caves

Why we love it:

This deep, dark Spanish red has real weight to it: sweet black fruit, savoury cedar and old wood, and tannins ripe enough to make it easy drinking despite the structure. Malbec fans especially should give this one a go.
