Elgin is the coolest wine region in South Africa. This cool climate allows for the perfect ripening of grapes, creating wines that have freshness, flavour and balance. Crepuscule means twilight and is the delicate example of these unique characters. Made from a single vineyard on the Atlantic coast where the breeze cools the vineyard. Rainwater is retained in the iron-rich clay and cobble soils which results in low yield and flavour concentration. The grapes were hand harvested, chilled and 30% was gently whole bunched pressed. They underwent a 3 day maceration before spontaneous fermentation began. Malolactic proceeded in barrels and the wine was left to mature using 30% New French oak barrels for a period of 11 months.
