Blend 29 was distilled with Cheshire Barley & Oats fermented with wild yeast and local spring water. This was then matured in Oak below the Cat & Fiddle for 3 years, before being blended with other selected whiskies at the distillery. A final, sumptuous stage of flavour was then added, by resting the blend in a 50 year old Oloroso cask in their own cellars.
The result is a delicious smooth whisky with a light sweetness of the very highest quality with a golden sunset colour. The nose is beguiling with sugared almonds, baked biscuits and candied orange notes. The palate is rich with toffee apples, shortbread and sweet raisin flavours before a long finish of soft wood and sweet vanilla.
As always this is non chill-filtered and no colourings or flavourings are added.

Forest Distillery began in 2014 when Lindsay & Karl Bond began home distilling tiny batches of spirits from the kitchen table in their home next to Macclesfield Forest.
These initial distillations were purely for their own enjoyment, so they threw in handfuls of berries, mosses and ferns which their 6 year old daughter Harriet had foraged from the forest and surrounding hills. Slowly but surely, word spread about their gin, and they decided to decant the liquid into porcelain bottles to see if anybody would be interested in tasting it?
Things have rapidly moved on. The Forest Distillery has now relocated to join their sister Whisky distillery at the iconic Cat & Fiddle in the Peak District National Park. They are still a tiny, independent distillery, and between the small team of 5, they continue to produce their products in the same ways that they did at home, using pestle & mortars and tiny 25 litre stills. The ingredients are foraged regularly in the Forest and they always do their very best to ensure that the fresh, natural flavours come through to your glass.
This has been bottled at 47% ABV in 700ml porcelain bottles using our own spring water. The bottles are made by Wade Ceramics, and are polished black porcelain with a papercut by the artist Georgia Low glazed with real gold. The shape of the Glencairn glass is perfectly suited for fine spirits and is designed to enhance the overall experience, from start to finish including the important, nosing and tasting.
