Tasting Note

Oloroso wines have a slightly higher abv thank other sherries, usually 17-20% to protect the wine during the long oxidation process of ageing. Dark mahogany in colour they tend to jump out of the glass with walnuts, spices and leather. More full-bodied than the others as a general rule but still with a dry finish.

Great with game dishes, beef or mushrooms.

Bodegas Rey Fernando de Castilla is located in the historic centre of Jerez. The Sherries produced here are amongst the finest in Jerez - from the pale, dry and elegant fino to the most unique antique wines. Their is focus entirely on high-end, complex sherries - in the process they have upgraded the bodega to one of the most interesting and highly regarded of the small independent sherry houses in Jerez.

Produced from 100% Palomino Fino grapes in Jerez de la Frontera. The grapes are pressed and fermented in stainlesss steel until the wine reaches 11% ABV when the dry wine is fortified to 18% ABV. It is then matured, without the presence of flor, in oak casks according to the traditional solera and criadera system for 8 years.

Flor is a layer of yeast that builds up and sits atop the wine, creating a layer within the barrel to protect it from oxygen, it imparts a unique salty, yeasty character to the wines
