The fruit for this cool Pinot Noir is from a single vineyard in San Antonio just 5 km from the ocean. The wine is bright and alive in the glass. You'll find aromas of ripe cherry, thyme and cured meat with subtle oak playing a supporting role. On the palate the emphasis is on drinkability and enjoyment with a finely textured palate full of pure red fruit and a zippy line of acidity keeping it fresh before a savoury, dry finish.
This is very versatile with food with anything from Salmon to Duck

Grapes are carefully selected and picked manually early in the morning. Cold maceration prior to alcoholic fermentation at 10C during 3-4 days in order increase skin components extraction. Alcoholic fermentation was carried out at low controlled temperature to maintain the delicate aromas and flavours. Regular pumping over was used to extract colour and a little tannin for stucture. Ageing took place in tank with oak to add complexity and subtle toasty character to the final wines.
