Get to know: El Hato y El Garabato, Eclectico Puesta en Cruz
Tasting Note
An exciting and unusually delicious Spanish wine here made using Rabigato (Puesta en Cruz) fruit grown on abandoned old vines. Rabigato is one of the oldest grape varieties but quite rarely seen as a single variety. Fermented in stainless steel and aged on lees for a short period, the wine is bursting with fresh citrus acidity and aromatics with apple, pear and lemon fruit with a light tropical note. Creamy richness and smoky complexity comes from the lees, and it shows great balance finishing with refreshing minerally acidity and a light saline hint.
Try this with a fresh dish of Seabream crudo, green tomato and fermented chilli
