100% Petit Manseng from the Jurancon. Lots of citrus fruit, pineapple, peaches and zesty limes. A blend from two vineyard sites, one which emphasises freshness and the other richness and power. It is foot trodden and basket pressed before being fermented in old oak from Bordeaux for 9 months on the lees to add depth and complexity. Drinking well now but will improve over time in bottle for a number of years.
Enjoy with chicken in mushroom sauce or a pork sunday lunch.
The idea behind Domaine d'Audaux is to take the undervalued and extremely high quality grape, Petit Manseng and make the very best wine possible irrespective of the cost and other economic considerations that confine all commercial grape growers the world over.
