Domaine Remoriquet was led by the late Gilles Remoriquet, one of Burgundy’s most thoughtful and quietly influential winemakers. Based in Nuits-Saint-Georges, Gilles was known for his curiosity, precision, and commitment to expressing terroir above all else. A pioneer of gentle extraction, longer macerations, and slower fermentations, he favoured concrete tanks over oak for fermentation and even developed densimetric sorting to remove underripe fruit. His wines are cerebral, structured, and built to age – a legacy that continues to resonate across Burgundy.

How it’s made:

• Varieties: 100% Pinot Noir
• Fruit from the Les Allots climat, located just below the Premier Cru sites, planted with vines averaging 80 years old
• Cold pre-fermentation maceration for 3–4 days, followed by long vatting of 25–28 days for gentle extraction
• Total or partial destemming depending on the vintage
• Aged for 14–16 months in oak barrels (15–20% new), with light filtration before bottling
