Pure Cinsault, organic, made as simply as possible - a Languedoc red wine to put in the fridge for half an hour first.

Tasting Note

Very ripe black cherry, a curl of chocolate, and violets sitting over the top. Ruby red and bright. The palate is charming and full of energy, with a spiced edge and enough body to stop it feeling slight, and it stays lean all the way through without ever thinning out. Served cool it becomes something else again - crunchier, fresher, properly thirst-quenching. This is the red for a warm day, and the red for the person who tells you they find red too heavy.

Top food pairings:

  • Grilled aubergine with harissa
  • A charcuterie board
  • Roast chicken, eaten cold the next day

"Cinsault is the grape most of the south uses for rosé but the reds are really worth trying if you like a lighter style. Gently chilled is where it makes the most sense - twenty minutes in the fridge, no more. All that ripe cherry brightens up and you get something genuinely refreshing."

Producer Info

Domaine Monplézy farm around 30 hectares of vines and scrub on clay-limestone with quartz gravel, on a hill near Pézenas inside a Natura 2000 zone. The estate went independent and organic in the same year, 2000, after decades of sending fruit to the co-operative. Anne and Christian run it with their children Benoît, who makes the wine, and Margot. They are members of the LPO, France's bird protection league, whose emblem - and theirs - is the hoopoe.

How it's made:

  • 100% Cinsault, at 35 hectolitres per hectare
  • Traditional vinification, kept deliberately simple
  • Aged in vat, with no oak at any stage
  • Organic, certified by ECOCERT
