Tasting Note

The ‘Gayda-Sphère’ range really taps into the rich variety of the Languedoc’s landscapes – from coastal plains to rolling hills. These wines bring together the best of tradition and modern winemaking to truly showcase each grape. This viognier is a lovely pale yellow with a touch of silver, catching the light just right, and hints at something delicate and refined. On the nose, you’ll pick up soft citrus peel, white flowers, and a bit of wild meadow herbs. On the palate, juicy William pear comes through alongside the refreshing zip of yuzu peel. The finish is long, with a touch of bitter almond adding a nice twist. A classy yet easy-going bottle.

Try this with a grilled sea bass topped with a citrus and herb salsa.

This white has a lovely mix of delicate citrus and floral aromas that make it feel really fresh and elegant. Its subtle complexity keeps things interesting. It’d be cracking with light, creamy vegetarian dishes or even some seafood on a cosy night in.

Domaine Gayda, nestled in Brugairolles near Carcassonne, is distinguished by a rich history and a philosophy focused on integrity and quality. Founded in 1749 as a coaching inn the farm buildings were gradually transformed into luxury accommodation, marking the beginning of a remarkable transformation. In 2004, under the enlightened leadership of owners Tim Ford and Anthony Record, in partnership with talented winemaker Vincent Chansault, the estate took a new turn by modernising significantly.

Winemaking for this wine starts with cold skin maceration on the schist plots, lasting 48 hours before pressing. After that, the grapes go through a pneumatic press, followed by cold settling. The fermentation happens in vats, kept at a cool 12°C to 18°C to bring out the best flavours.

The vineyards are based in Minervois, where the limestone soil adds its own unique character to the grapes.

The wine is aged for 6 months on fine lees, which gives it extra depth and complexity before blending and bottling.
