Tasting Note

This beautiful Burgundy red wine lives up to its name, Charmer. Pommard’s reputation for intensity and depth is perfectly embodied here, making it a standout for serious Pinot Noir lovers. The wine is velvety red with a dark berry nose, blackcurrant and blackberry which evolves into coffee notes. The palate is deeply expressive and showcases the powerful, earthy side of Burgundy. There's a lush, mouth filling body with a round and delicate structure. 

Try this with game meat, venison, rabbit or strong soft cheeses.

"This fabulous Pommard is enjoyable now, especially if you appreciate young, vibrant Pinot Noir with fresh fruit and firm tannins. However, this wine has the structure and depth to benefit from some time in the cellar. Ideally, you could drink it now with some decanting, but it will really start to show its full potential in about 5-7 years."

The Pillot family have been growing grapes in Chassagne-Montrachet since the 19th century. Laurent, who has been in charge of the domaine for many years, is the 5th generation. Today, the domaine comprises nearly 15 hectares and covers over 22 different appellations. Laurent has now been joined by his young son, Adrien, who is full of great ideas - having worked in South Africa (Hamilton- Russell), New Zealand, Oregon and Australia - including longer élevages for some of the white wines. Laurent and Adrien strongly believe in low yields and a strict form of viticulture, which Laurent describes as being “80% organic”. Any necessary treatments are kept to the very minimum possible. His reds, which are generally 100% destemmed, have improved beyond all recognition over the last few vintages. They are ripe, succulent, elegant and delicious. 

The fruit for this wine is Pinot Noir pruned in Guyot style over 0,74 acres of small, inherited parcels of vines situated on the hill which overlooks the 1er Cru Epenots. Planted in 1952 and 1989, the vines are ideally exposed to the rising sun, on a sloping, shallow soil.

The grapes are hand-picked, transported to our winery, destemmed and put into tank. After a few days of cold maceration, the alcoholic fermentation is traditionally started with regular cap punching, thus enabling very small temperature regulations of the fermenting grapes. Then, aged in French oak barrels (40% new). Bottled at the winery after aging for 18-19 months.
