Tasting Note

A stunning example of why Chassagne-Montrachet is celebrated for its white wines. With aromas of ripe pear, citrus, and a hint of toasted almond, this wine is rich yet refined, offering a perfect balance of creamy texture and zesty acidity. Chassagne-Montrachet is one of Burgundy's top white wine appellations, known for producing wines with both power and elegance. As a Premier Cru, Les Champsgains brings more depth and complexity compared to village-level wines, showcasing minerality and length that promise aging potential. A standout Chardonnay with serious finesse. Will easily age for 3-10 years. 

A good match with grilled fish, prawns, crayfish/lobster or meat in creamy sauces. Laurent Pillot suggests trying it with sweet-breads too and serving at 14°C

The Pillot family have been growing grapes in Chassagne-Montrachet since the 19th century. Laurent, who has been in charge of the domaine for many years, is the 5th generation. Today, the domaine comprises nearly 15 hectares and covers over 22 different appellations. Laurent has now been joined by his young son, Adrien, who is full of great ideas - having worked in South Africa (Hamilton-Russell), New Zealand, Oregon and Australia - including longer élevages for some of the white wines. Laurent and Adrien strongly believe in low yields and a strict form of viticulture, which Laurent describes as being “80% organic”. Any necessary treatments are kept to the very minimum possible. All his white wines are vinified in barrique and are characterised by purity, 1er Cru Champgains is from heavier soils and is rounder and more accessible.

This parcel of vines was replanted in 2002 and is situated next to the family home. Before replanting the soil was left to regenerate without the application of fertilizer for 5 years. The result being young healthy vines who are already giving very mature grapes.

The grapes are hand-picked. Pressed, the juice is then fermented in French oak barrels (30% new). The wine is barrel aged until the following summer. In this way, the wine has time to integrate and confirm its personality. Bottled at the winery after aging for 11-12 months.
