Tasting Note

An invigorating white wine with a subtle, floral mineral nose. Great intensity with sea breeze salinity running through an impressive structure, there is tension on the palate. In the mouth the texture is silky and round and very refreshing.

Super saline style, bright and pale, super dry and low acidity these styles are a perfect match for seafood such as tuna empanada, crab tacos and anchovies.

Once open, keep in the fridge  and drink within a week.

Diatomists is an intriguing sherry producer, blending tradition with innovation. Their Manzanilla sherry is crisp and briny, with a light, refreshing finish that sets it apart. Ideal with seafood or salty snacks, it’s a perfect choice for a laid-back, yet refined, aperitif.

Diatomists are part of a new wave of winemakers who are determined to put the soil and the fruit back in the spotlight in Jerez, producing wine that clearly reflects the vines’ terroir alongside the solera system in which it matured: wine that proves that whilst quality and consistency are achieved through the bodega, excellence is in the soil.

Their goal is to select, ship and share fresh white wine with abundant fruit, complimented either by the flor, in the case of biologically aged wines, or the bota, in our barrel-aged range.

Their Pago range consists of bottles sourced from a particular vineyard within the Appellation of Jerez. They recognise that every pago imparts its own character on the grapes and the final bottle. All things can be measured by the sum of its parts: Diatomists’ believe in this maxim and work with growers focused on producing the best fruit as a true expression of the soil.
