Amazingly structured wine from lesser known, local variety Albillo Real. 72 hours of skin contact during whole-bunch fermentation before 11 months ageing in 225 litre French oak barriques. The resulting wine is complex and concentrated with pithy citrus fruit and a wonderfully judged oxidative edge. A really interesting wine that would work well with food, maybe Kimchi which can traditionally be difficult to pair would work nicely here.
