A bold and expressive Spanish skin-contact white wine from the rugged slopes of the Sierra de Gredos.

Tasting Note

An intriguing, uncompromising yet superbly drinkable skin-contact (orange) wine from the trendy Gredos mountain range. The grape is Cayetana (or Jaen Blanco), and is normally associated with unremarkable table wine or brandy. Neutral flavour, low sugar and high acidity... and yet... what Daniel is able to do with this grape is fantastic. Fermented and aged mainly in stainless steel tanks with just 1 barrel used to add a little complexity. This is soft on the attack, crunchy on the finish showing great flavours throughout from peach to bruised apple to sweet spices, even with a very subtle nutty vibe. It's 11.5% so reasonably light in alcohol considering how much flavour it packs in. An awesome wine, whether you're an orange wine fanatic or just interested to try something new. It will pair brilliantly with white meats or even Moroccan lamb.

Daniel Ramos is part of a new wave of winemaking in the Sierra de Gredos, a region fast gaining recognition for its old vines and high-altitude terroir. The vineyards, many over 60 years old, are scattered across villages such as Cebreros, El Tiemblo, and El Barraco, where poor mountain soils and extreme conditions naturally limit yields but produce wines of remarkable intensity. By embracing native yeasts, long macerations, and minimal intervention, they producers craft authentic wines that reflect both grape and place.

How it’s made:

  • Varieties: Jaen Blanco (Cayetana)
  • Hand-harvested between late August and early September for optimal ripeness
  • Destemmed, crushed, and fermented with indigenous yeasts
  • Skin contact for 32–47 days to build texture and aromatic depth
  • Aged on lees from October to February, with one oak barrel blended for added complexity
