Curing Rebels are a small but mighty crew based in Brighton, shaking up the British charcuterie game with bold flavours and big ideas. They work with high-welfare, outdoor-reared British pork and make everything by hand in small batches at their HQ by the sea.
The Goan Beer Snacks are a good example of their twist-on-tradition approach. They start with carefully butchered pork, seasoned with a house blend of Goan-inspired spices – expect chilli, garlic, and a warm, earthy spice base – then ferment and cure the meat slowly over time. That curing process draws out the flavour, concentrates the umami, and gives them their signature chewy bite.
