Cassagne et Vitailles, Combarels a la lumiere 2025

Get to know: Cassagne et Vitailles, Combarels a la lumiere 2025

A Terrasses du Larzac red from a young Languedoc estate, and the sister wine to their Combarels 'De l'ombre'.

Tasting Note

Earlier vintages of this cuvée have shown ripe berries and cherry, with earthy, sweet tobacco notes underneath. Expect a full, juicy red with round tannins and a flavourful finish. This is a young vintage, so a short spell in a decanter helps.

Top food pairings:

  • Roast chicken with herbs
  • Grilled sausages with mustard mash
  • Vegan: lentil and mushroom stew
Kate Says

"A Languedoc red for the table. Think roast chicken, a few good sausages, whatever's going. It's from a young estate that's only been going since 2015, and it's worth getting to know early. Give it a bit of air first."

Producer Info

Cassagne et Vitailles began in 2015, when friends Nicolas Seffusatti and Matthieu Rollin, who'd spent years importing wine, set up their own estate in Montpeyroux on the Terrasses du Larzac. They farm about 7.85 hectares, mostly Syrah, Grenache, Carignan, Mourvèdre and Cournoise, and make roughly 19,000 bottles a year. They say they've worked organically, with biodynamic practices, from the start. Their logo is a set of scales with a sun and a cloud, and a Latin motto, Perfectus in statera, which means 'in perfect balance'.

How it's made:

  • Grown on the Terrasses du Larzac around Montpeyroux
  • The estate says it works organically and biodynamically, in a gravity-fed winery with no pumping
  • Grape, vinification and ageing for this wine: Not supplied

Good to know:

  • Grape: Syrah, Grenache
  • Style: Red, still
  • Closure: Cork

Why we love it:

A young Languedoc red from an estate worth getting to know. One for the dinner table with friends.
