Since the early 2000s, they’ve transformed a sleepy estate into a cutting-edge operation, replanting vineyards and investing in modern kit to bring out the best in both international and local grapes. The vineyards are meticulously managed, with a focus on sustainability and grape quality.
Grapes are gently crushed and de-stemmed, then chilled before pressing.
Juice is clarified and fermented in stainless steel tanks at controlled low temperatures (10–15°C) over 2–3 weeks to retain aromatic intensity.
