Get to know: Folding Hill, Ballasalla Pinot Noir 2020
Tasting Note
This is the second wine of the fabulous Folding Hill and is fresher, younger style than the estate wine. Classic Bendigo, Central Otago flavours of blackberries and dark raspberries with subtle herb and earthy notes, spice wrapped up by a balanced oak influence from six months in barrel on a medium-bodied palate.
Pair with duck, venison, salmon. Enough body to match a good steak!
Producer Info
Folding Hill is a small family owned wine company that makes premium wines from fruit grown entirely on its own 11 acre, vineyard in Bendigo Central Otago. Originally planted entirely in Pinot Noir, which is now certified organic, subsequent plantings have included Chardonnay and Pinot Gris. Virtually all viticulture is done by hand and yields are managed to provide optimally ripe fruit that allow our wines to fully express the beautiful site they come from.
They use traditional old world techniques and a 'hands-off' approach of minimal intervention with all their wine making. Their Pinot Noir is made with fully destemmed, but not crushed, fruit that is vinified in small open top fermenters and matured in French oak barriques.
