Domaine Gayda, Flying Solo White 2023

Get to know: Domaine Gayda, Flying Solo White

Fresh, floral and full of character – this white from the ‘Flying Solo’ range proves that local grapes can truly soar.

Tasting Note

A blend of Grenache Blanc and Viognier grown on limestone terraces in the Minervois, it’s zesty and expressive with a gentle aromatic charm. Bright pale yellow with silver glints, this white opens with aromas of pear, almond blossom and fresh herbs. The palate is soft and generous, showing juicy pear and white peach balanced by delicate acidity. A subtle note of grapefruit zest lingers on the finish, adding a touch of bitter freshness and fine balance.

Top food pairings:

  • Light seafood dishes like grilled prawns or lemon sole
  • Fresh goat’s cheese salads with citrus dressing
  • Vegetable tempura or mildly spiced Thai green curry
Kate Says

Domaine Gayda have really impressed us with their wines purity of fruit and it really comes across in this lively and refreshing white blend. Bursting with citrus and floral notes, it's incredibly easy to drink. Ideal for sunny afternoons or casual dinners, it pairs wonderfully with seafood, salads, or grilled chicken. A fantastic, great value everyday wine!

Producer Info

Domaine Gayda, nestled in Brugairolles near Carcassonne, is distinguished by a rich history and a philosophy focused on integrity and quality. Founded in 1749 as a coaching inn, the farm buildings were gradually transformed into luxury accommodation, marking the beginning of a remarkable transformation. In 2004, under the enlightened leadership of owners Tim Ford and Anthony Record, in partnership with talented winemaker Vincent Chansault, the estate took a new turn by modernising significantly.

The ‘Flying Solo’ series is inspired by the fearless postal pilots of the 1920s – and this wine follows suit, boldly embracing local grape varieties in a fresh and modern style. The vineyard sits on limestone terraces with clay soils, providing a unique foundation for the wine's character.

How it’s made:

  • Grapes grown on limestone and clay terraces in the Minervois
  • Pneumatic pressing to preserve purity and aromatics
  • Cold fermentation to lock in freshness
  • Aged on fine lees in stainless steel tanks for texture and balance
  • Blended, then sterile filtered before bottling
