Old vine Chenin Blanc made using the oldest technique in the world for producing sparkling wine, Methode Ancestrale. The wine is bottled part way through fermentation to trap carbon dioxide and thus create a gentle carbonation, much lighter than the traditional method used in Champagne.
This is a perfect aperitif.
