Gayda's Sphere range of wines really shows off the quality of single grape varieties across the terroirs of the Languedoc. They’ve struck a great balance between sticking to tradition and bringing in a bit of innovation to let each grape truly shine. In the glass, their Pinot Noir is a brilliant ruby red – youthful and inviting. On the nose, you’ll find lush red cherry and raspberry aromas, with a twist of cinnamon peeking through as it opens up. The palate is smooth and supple, with gentle tannins and a lovely mouthfeel. Think wild strawberries to start, followed by soft spice, cocoa and a silky finish full of mocha and tonka bean. It’s got gentle structure, subtle depth, and a satisfying finish - everything you want in a French red wine at this level.
Try this with grilled portobello mushrooms with herby couscous, roast duck with cherry glaze or Mature cheddar.

Domaine Gayda, nestled in Brugairolles near Carcassonne, is distinguished by a rich history and a philosophy focused on integrity and quality. Founded in 1749 as a coaching inn the farm buildings were gradually transformed into luxury accommodation, marking the beginning of a remarkable transformation. In 2004, under the enlightened leadership of owners Tim Ford and Anthony Record, in partnership with talented winemaker Vincent Chansault, the estate took a new turn by modernising significantly.
This 2024 Pinot Noir is made without any added sulphur, a brave move that pays off with real purity and expressive character. Grapes are cold-soaked for 10 days to draw out colour and flavour gently, before a cool fermentation and light handling in the winery. It’s then aged for six months on fine lees in stainless steel tanks, building texture and subtle depth.
