Tasting Note

The ultimate sweety in the range, this is made from overly ripe grapes which are left to dry out in the sun and build up a huge concentration of sugar. The ageing here is exclusively oxidative and the flavours are packed with figs, dark chocolate, roasted coffee and cigar box aromas, this is a smooth and balanced PX without cloying sweetness. Extremely concentrated and nuanced, an ethereal wine with invigorating acidity. The finish is endless with a hint of nutmeg and cloves.

Perfect poured over ice cream or with a pecan and maple pie.

Once open, keep in the fridge  and drink within 2 weeks.

Diatomists are part of a new wave of winemakers who are determined to put the soil and the fruit back in the spotlight in Jerez, producing wine that clearly reflects the vines’ terroir alongside the solera system in which it matured: wine that proves that whilst quality and consistency are achieved through the bodega, excellence is in the soil.

Their goal is to select, ship and share fresh white wine with abundant fruit, complimented either by the flor, in the case of biologically aged wines, or the bota, in their barrel-aged range.

Their Singular Botas range consists of carefully selected barrels from the cavernous bodegas in Jerez. We look for characterful barrel-aged wines which are balanced and harmonious: fruit and acidity, providing much needed freshness, alongside tertiary flavours. Selected from individual, numbered botas requiring extensive tastings, our goal is to find the liquid that clearly reflects the grapes’ journey from soil to solera.
