Natural Wine

What is Natural Wine?

Natural wine has no single legal definition, but the principles are widely understood: grapes farmed organically or biodynamically, with minimal intervention in the winery. That means native yeast fermentation, no additions or corrections, and bottling with little or no sulphur - unfined and unfiltered where possible. The result is wine that is alive, expressive and genuinely reflective of where it comes from.

Natural Wine FAQs

Is natural wine the same as organic wine?

Not exactly. Organic wine refers specifically to grapes grown without synthetic pesticides or fertilisers, and the term is legally defined and certifiable. Natural wine goes further in spirit - it typically starts with organically or biodynamically farmed grapes, but the defining characteristic is minimal intervention in the winery: no added yeasts, no fining agents, no corrective additions, and little or no sulphur. A wine can be organic without being natural, and vice versa.

Why does natural wine sometimes look cloudy?

Many natural wines are unfined and unfiltered, which means the fine particles that conventional winemaking removes - dead yeast cells, grape solids - remain in the bottle. This gives some natural wines a hazy or cloudy appearance. It's entirely normal and has no bearing on quality. In fact, many producers consider it a sign of a wine that hasn't been stripped of character.

Does natural wine contain sulphites?

Most natural wines contain very low levels of sulphur, and some are made with none added at all. Sulphur dioxide (SO₂) is the most common preservative used in conventional winemaking; natural winemakers avoid or minimise it, relying instead on careful cellar hygiene and technique. That said, all wine contains trace amounts of naturally occurring sulphites as a by-product of fermentation.

Why does natural wine taste different?

Natural wines often have a more textured, unpredictable character than conventional wines. You might notice funkier, earthier notes - sometimes described as barnyard, cider-like, or brett - alongside vibrant fruit and a lively acidity. This is partly the result of native yeast fermentation, which produces a wider range of flavour compounds than commercial yeasts. It's also what makes natural wine so interesting: no two bottles are quite the same.

How should I store and serve natural wine?

Natural wines are generally more sensitive to temperature and light than conventional wines, so store them somewhere cool and dark. Because many are unfined and unfiltered, it's worth standing the bottle upright for an hour or two before opening to let any sediment settle. Serve at the temperature that suits the style - lighter reds slightly chilled, whites and orange wines well chilled. Some natural wines also benefit from a little air, so don't be afraid to decant.
