- Vines averaging 45 years old, rooted in red silt soils with chailles and pebbles over Oligocene marl
- Cold pre-fermentation maceration for 3–4 days, followed by long vatting of 25–28 days for gentle extraction
- Aged for 14–16 months in oak barrels (10–15% new), with light filtration before bottling
