Château de Saint-Pey has been part of the Saint-Émilion appellation since 1744. Now guided by Frédéric Stévenin, the estate blends tradition and modern technique to craft refined, approachable Bordeaux reds. Its south- and north-facing vineyards benefit from sandy-clay soils on the hillside, producing concentrated grapes with elegance and balance. The estate’s careful attention to terroir, vineyard management, and plot-specific vinification ensures wines of purity and consistency.

How it’s made:

  • Varieties: 90% Merlot, 10% Cabernet Franc
  • Harvest: Mechanical with on-board sorting, followed by optical sorting in the vat room to select only the best berries
  • Maceration: Vatting by plot for four weeks at 26–28°C
  • Fermentation: Temperature-controlled concrete vats to preserve pure fruit expression
  • Ageing: 12–14 months in 30% new oak barrels, 50% older barrels, and 20% vats for subtle complexity
