Discover the rich, luscious world of Italian Appassimento wines with this specially curated trio. Featuring three standout bottles - Mabis Biscardo Neropasso, Baglio U...Passimiento, and Pirovano Beatrice Rosso Appassimento Salento - this selection brings together the best of Italy’s prised drying grape technique. Each wine is crafted from partially dried grapes, delivering intense flavours, velvety textures, and a natural sweetness balanced by soft tannins. Perfect for fans of full-bodied reds with ripe fruit and spice, this trio showcases the diverse styles and terroirs of Italy’s southern and northern regions.
While all three wines share the hallmark Appassimento richness, they each bring a distinct regional twist. Neropasso impresses with its dense, chocolaty depth from the north; Baglio U...Passimiento offers a fruit-forward, softer Sicilian style; and Pirovano’s Salento Rosso provides a fresher, slightly lighter southern profile with a nutty finish. Together, they make a versatile set to enjoy alone or with varied dishes.
“This Appassimento trio is a brilliant way to explore the unique charm of Italy’s drying grape tradition. From the plush, dark fruit of the Neropasso to the smooth richness of Baglio’s offering, finishing with Pirovano’s vibrant Salento style, there’s something here for every palate. Ideal for cosy evenings or special meals, these wines show how Italy’s Appassimento reds are consistently among our most popular."
Biscardo Neropasso, 13.5% ABV, Veneto, Vegan
Lush and full-bodied, with bags of black cherry, ripe plum, and a gentle aroma of warm spices like clove and vanilla. There’s a touch of richness from the Appassimento method, which gives it that “baby Amarone” feel – bold, smooth and velvety, but not too heavy on the tannins. Perfect for those who love their reds rich, rounded and ready to drink.
Try with slow cooked lamb, veggie moussaka, or aged hard cheeses.
Baglio Gibelina, U... Passimiento, 13.5% ABV, Sicily, Vegan
Made with a blend of Nero d’Avola and Frappato, it pours a deep ruby red and gives off big aromas of ripe red berries, dark cherries and a touch of sweet spice. On the palate, it’s smooth as silk – all rich fruit, a little raisiny warmth, a splash of vanilla and a whisper of cocoa. The acidity keeps it fresh, while the tannins are soft and velvety. Pure comfort in a glass.
Try with Slow-cooked duck leg or pancetta-stuffed pasta. If you're going cheese, try gorgonzola or a punchy blue-veined cheese to pick up on the wine’s sweet-savoury notes.
Cantine Pirovano, Beatrice Appassimento Rosso Salento, 14.5% ABV, Apulia
Big, bold, and velvety smooth – this Italian red wine from Salento hits all the right notes. Made in the traditional appassimento style, this is rich and warming, packed with flavours of dried cherries, plums, sweet spice, tobacco leaf and a touch of dark chocolate. There’s a touch of sweetness, but it’s beautifully balanced by freshness and fine tannins.
Perfect with Slow-cooked beef ragu or roast lamb with rosemary, or an aubergine and lentil stew.
