The Cramele Recas Estate, owned by Englishman, Philip Cox and his Romanian wife Elvira, have put in a huge amount of work into transforming their slice of grape growing history into a contemporary winemaking haven.
For Solara Natural Red, they keep things as low-intervention as possible. The grapes (76% Merlot, 24% Cabernet Sauvignon) are gently destemmed and macerated for five days on the skins, which brings out the colour and soft tannins without overdoing it. Fermentation and malolactic conversion happen naturally in stainless steel, and the wine is stabilised outside during the Romanian winter – no additives, no filtering, no fuss. That hands-off approach gives the wine its pure, fruit-driven character and keeps it vibrant and full of life. A proper introduction to natural wine – bright, honest and straight-talking.
