Tasting Note

This wine is the backbone of the Yann Chave estate and is built around the three main plots of Syrah in the Crozes-Hermitage appellation. Rich and generous, expressive and complex. It reveals aromas of juicy and crunchy black fruits such as cherry, plum and fine notes of black pepper.  On the palate, crunchy and juicy  black fruit, velvety tannins lead to a lifted freshness on the finish.

A great wine to pair with game birds such as pheasant or pigeon.

Yann's parents started the adventure of the estate. They settled there at the very beginning of the seventies with four hectares: one in vineyards, the other three intended for arboriculture. Then they continue to enlarge the estate while preserving this double culture that signed the time. The first harvests are delivered to the local trade and, in 1973, they vinify their first vintages and then join the Cave Coopérative de Tain until 1978. The following year, Nicole and Bernard Chave created their own cellar.

Yann engaged in organic farming in the early 2000s. The estate was certified in 2007. Today, the estate in the heart of the Crozes-Hermitage appellation consists of 20 ha including 1 ha 20 on the mythical Hermitage hill.

The grapes are 100% destemmed and fermented with indiginous yeast.

The maceration phase lasts 3 to 4 weeks. There is very little punching, he prefers pump overs which are a softer way to extract. The temperatures of the winemaking are also measured: 20 to 28 ° C maximum.

After deception, the wines remain in vats for 10 months. This wine does not know wood to be on a register of fruits and balance.
