Harvested while the acidity is still vibrant and sugar level not too high to retain elegance. Some flavoursome pressings were re-incorporated into the free run and the wine fermented with a neutral yeast. The French oak used provides a subtle background to the fruit, while maturation on lees has helped provide the persistence of flavour.
