From glassware to grapes, Dave answers your top 10 wine FAQ's
Hi, I’m Dave - and I’ve worked in the wonderful wine at Reserve for over 10 years now. You could say I know my Merlot from my Montepulciano.
Whether you’re new to wine or consider yourself a budding connoisseur, there are always a few questions that come up time and time again - and I’m here to answer them. From how to store your bottles to what glass to use (yes, it matters), here’s a handy cheat sheet of the 10 most asked wine questions we get at Reserve Wines, along with my honest answers.
Let’s raise a glass to learning a little more about what’s in your glass!

1. How should I store wine at home?
Wine prefers calm, cool, and dark environments. After your wine is delivered or you've unpacked it from your shop, store bottles on their side (especially corked ones) to keep the cork moist, and avoid places with fluctuating temperatures like kitchens. Ideally, aim for 10–15°C. If in doubt, a wine rack in a cupboard works better than a sunny shelf.

2. Do I really need different glasses for red and white wine?
In short: yes. Red wines benefit from rounder, wider glasses that help aeration, while white wines do better in narrower glasses to preserve their delicate aromas. But if you’re only buying one type? Go for a universal glass that’s tulip-shaped - versatile and elegant. We have a fantastic range of Schott Zwiesel glasses for all wine types that is well worth a nosy.
3. Should I decant my wine?
Decanting can work wonders, especially for bold reds. It helps open up aromas and soften tannins. Even younger reds or natural wines can benefit. Simply pour slowly into a decanter or jug and give it 20–30 minutes before sipping.
4. Is an older vintage always better?
Not necessarily. While some wines (like Barolo or Bordeaux) improve with age, most wines are meant to be enjoyed within 2–5 years. Older doesn’t always mean better or more expensive - it depends on the grape, producer, and how it's been stored.

5. What’s the best way to chill wine quickly?
Wrap the bottle in a damp tea towel and pop it in the freezer for 15 minutes. Or use a bucket of water, ice, and salt - that chills wine faster than just ice alone. Just don’t forget it’s in there!
6. Can I drink red wine chilled?
Absolutely! Lighter reds like Gamay or Pinot Noir shine at slightly cooler temps - 12–15°C is ideal. It brings out the fruit and freshness. Just pop the bottle in the fridge for 20 minutes before serving.
7. Why does wine taste better at restaurants?
Atmosphere, glassware, food, and serving temperature all play a role. Plus, many restaurants work with great suppliers (like us!) to source interesting bottles that are served with care and context. Recreate the magic at home by decanting, pairing well, and using proper glasses.

8. What’s the difference between organic, biodynamic, and natural wine?
-
Organic wine: Made with organically grown grapes, free from synthetic pesticides.
-
Biodynamic wine: Goes a step further — working with lunar cycles and natural composts to support the vineyard ecosystem.
-
Natural wine: Usually minimal intervention, wild fermentation, and no added sulphites. Cloudy? Sometimes. Funky? Often. Delicious? When done right, yes.
9. How long does wine last once opened?
-
Red wine: 3–5 days, sealed and stored in a cool spot.
-
White & rosé: 2–4 days in the fridge.
-
Sparkling: Best within 1–2 days — use a sparkling stopper to retain fizz.
Pro tip: Use a vacuum pump or Coravin system for longer freshness.
10. What food goes best with my wine?
Start with balance — match the weight of the wine with the dish. Rich reds = steak or slow-cooked dishes. Crisp whites = seafood, goats cheese, salads. Sweet wines = blue cheese or dessert. Or just ask us — we love a pairing challenge.
