Pike Creek comprises two traditional components of Canadian whisky. The first spirit is double colum distilled from corn, creating a buttery-mouth; the second is once column distilled from rye, producing spicy and nutty notes. During maturations, casks are subject to the extreme temperature swings of southern canada. This forces the spirit in and out of the wooden staves giving Pike Creek it's rich, complex flavour.
