Tasting Note

Forged from the talent, heritage and industry of Edinburgh and its historic distilling district of Leith. This is a classic robust London dry gin using 7 botanicals, juniper, coriander, angelica, liquorice, orris, fresh lime peel and aromatic pink peppercorns made in a copper pot still.

Try this in a G&T with light tonic and garnish simply with a slice of lime.

Or try this in a French 75 cocktail. A decadent mix of champagne, gin, lemon juice and sugar syrup, the famous French 75 dates back to the First World War, created in 1915 at Harry’s New York Bar in Paris.

50ml Lind & Lime

30ml freshly squeezed lemon

15ml sugar syrup

Shake and pour into a champagne flute. Once settled, pour champagne or prosecco down a bar spoon allowing it to sit on top of the gin mix.

Optional: drop a sugar cube into the glass. Serve with a lemon twist

Lind & Lime set out to create the very definition of what a London Dry Gin should be; to do something very simple, but do it to perfection. Forged from the talent, heritage and industry of Edinburgh and its historic distilling district of Leith. In everything that they produce, the watchword is ‘balance’.

To make this gin they first proportion organic grain neutral spirit with water and six out of the seven organic botanicals (juniper, coriander, angelica, liquorice, orris root and pink peppercorns (day before production) mixing them together in a 1000 litre copper pot still. This is given 16 hours to macerate allowing the dry botanicals to rehydrate and imbue the spirit with flavour.

The following morning they load a large vapour basket with a couple of kilos of fresh organic lime peel. The mixture of spirit and botanicals is heated using 100% green electricity and over the course of 9 hours the rising vapour infused with the botanicals from the pot passes through the lime peel giving it a beautiful citrus top note. The vapour is then condensed back into spirit, capturing all of the flavour and aroma of fruit, pine and citrus.

After at least two weeks resting the gin is bottled in-house and hand-labelled with plastic free-tamper seals that secures a natural cork in an entirely plastic free pack.
