Libre y Salvaje is an old winery located in the historic village of Almonacid de la Sierra. This unique enclave is characterized by its caves, mountain vineyards, old vines and organic farming. For this winery there is only one rule, to follow the law of nature. This Carignan has a fruity nose of sour cherry red plum and strawberry with the added complexity of dried herbs and violet notes. On the palate is it medium-to-full bodied with a food friendly structure and refreshing acidity. A vibrant and delicious wine with a hint of baking spice and minerality on the finish.
Try this with lamb dishes or a bowl of richly sauced pasta.
"Carignan can be rustic, but this exotically scented Spanish red is more floral in character, with an enticing aroma of dried rose petals. An unconventional choice for Easter, maybe, but a fantastic pairing with Middle Eastern-spiced lamb."
Fiona Beckett - The Guardian March 2024
The winery is in the historic town of Almonacid de la Sierra in the Algairén mountain range Algairé, D.O. Cariñena. Creating landscape wines which speak of a unique land is the essence and passion of Libre y Salvaje (Free & Wild). Freestyle, wild vines. Using minimal intervention to achieve maximum expression. High altitude vineyards of native varieties, old dry vines, and ecological agriculture. Wine is produced and aged following artisanal methods in wooden foudre, stainless steel, concrete and big clay jars in an old winery with caves for aging in an optimal natural environment. Rescue great abandoned vineyards of native varieties, recover a cellar with centuries-old caves and back to the past to look ahead. Because in life, the best is always free and wild.
Wine made with Carignan grapes harvested by hand. Plots located in the El Pedregal area, about 650mts. The age of the vineyard is about 40 years. Silt and clay horizons with a diversity of stones and pebbles, decreasing depending on the depth. 12 months in wooden, concrete and 500L barrel vats.
