Get to know: Finca Bacara, Time Waits for No One Monastrell 2024
A bold and characterful Spanish red wine from the sun-soaked region of Jumilla in south-eastern Spain.
Tasting Note
Finca Bacara Time Waits for No One Monastrell is a rich yet finely balanced red that brings together vibrant fruit, spice, and a hint of earthy minerality. Deep ruby in colour, it opens with expressive aromas of wild berries, violets, and vanilla. On the palate, it’s juicy and full-flavoured, with ripe plum, dark cherry, and a touch of balsamic complexity. The texture is smooth and warming, lifted by a thread of freshness and finishing long with hints of spice and soft tannins. A beautifully made Monastrell from Jumilla that’s both generous and refined.
Top food pairings:
- Slow-cooked lamb shoulder with rosemary and garlic
- Chargrilled vegetables and smoky aubergine dip
- Mature Manchego cheese
Kate Says
"A really lovely wine. Not as jammy as other Monastrells but more complex for it – loads of fruit, warmth, and that lovely earthy edge. Perfect with roast lamb or something slow-cooked on a chilly evening."
Producer Info
Finca Bacara is a forward-thinking organic producer based in DO Jumilla, a region renowned for its expressive Monastrell wines. Their philosophy – ‘Time Waits for No One’ – is about seizing the moment and savouring what nature gives. Farmed organically at 900 metres altitude, their vineyards benefit from hot days and cool nights, producing fruit with concentrated flavours and natural freshness. Winemaker Luis Javier Pérez and Irene Gómez craft modern, fruit-driven wines that stay true to the rugged beauty of Jumilla’s landscape.
How it’s made:

- Grapes are hand-harvested from certified organic vines at 900 metres elevation
- Fermentation and maceration on skins for 15–25 days in stainless steel tanks
