This is a semi-sweet style that comes from oxidised Oloroso wines blended with an amount of Pedro Ximenez. A rich amber colour. Dense and syrupy with sweet roasted nuts and caramel flavours. Fascinatingly complex with a light Christmas pudding nose of dried fruits, nuts, and a well flambéed crust. The rich concentrated flavours and tangy acidity are softened by a sweetness on the palate which brings it all together in a wonderfully balanced way.
Great with chocolate or classic pastel de nata tarts, Christmas cake or Christmas pudding style desserts.
Bodegas Rey Fernando de Castilla is located in the historic centre of Jerez. The Sherries produced here are amongst the finest in Jerez - from the pale, dry and elegant fino to the most unique antique wines. Their is focus entirely on high-end, complex sherries - in the process they have upgraded the bodega to one of the most interesting and highly regarded of the small independent sherry houses in Jerez.
Grapes are sourced from the Jerez district. The sherries are all from individual soleras. They are bottled without blending, cold stabilization or filtration of any kind in order to preserve the subtlety, purity and distinctive aromas of these premium wines. The classic Cream is produced from an Oloroso that has been aged for 6 years, and prior to bottling 20% of young PX is blended into the wine.
