Tasting Notes

This is quite a unique wine as it combines the two ageing processes, first, it spends time under flor followed by a period of being exposed to oxygen. This fusion makes for an incredibly complex style. This is a fine, complex and sophisticated drink. Beautiful shining amber colour, fascinatingly complex raisined, nutty, tangy nose and a flavour displaying layer upon layer of deliciously plump sensations on the way.

Serve as an aperitif with Iberico ham, salted almonds or olives or try with mature cheddar, walnuts or figs.

Producer Info

Bodegas Rey Fernando de Castilla is located in the historic centre of Jerez. The Sherries produced here are amongst the finest in Jerez - from the pale, dry and elegant fino to the most unique antique wines. Their is focus entirely on high-end, complex sherries - in the process they have upgraded the bodega to one of the most interesting and highly regarded of the small independent sherry houses in Jerez.

Grapes are sourced from Fernando de Castilla's partners vineyards in the Jerez district. The soil type is Albariza. Picking takes place in early September. This Amontillado began life as a Fino. It spent 3 years under flor yeasts at 15%, but was then re-fortified to 17% abv and introduced to an Amontillado Solera - without flor and therefore exposed to air. It spends approximately 5 years in this solera.

Flor is a layer of yeast that builds up and sits atop the wine, creating a layer within the barrel to protect it from oxygen, it imparts a unique salty, yeasty character to the wines.
