Gayda Sphere Viognier is a refined, aromatic white that beautifully balances bright fruit with delicate floral notes. Pale yellow with a hint of silver, it offers aromas of white flowers, citrus peel, and wild meadow herbs. On the palate, juicy William pear and zesty yuzu peel shine through, complemented by a long finish with a subtle twist of bitter almond. Domaine Gayda, based in Brugairolles near Carcassonne, has a rich history and a focus on integrity and quality. Founded in 1749, the estate has evolved under the guidance of Tim Ford, Anthony Record, and winemaker Vincent Chansault, combining traditional Languedoc vineyard knowledge with modern techniques to produce wines that reflect the region’s diverse terroirs.

How it’s made:

  • Varieties: 100% Viognier
  • Grapes sourced from Minervois vineyards with limestone soils
  • Cold skin maceration for 48 hours on schist plots before pressing
  • Pneumatic pressing followed by cold settling
  • Fermented in vats at 12–18°C, then aged 6 months on fine lees before blending and bottling
