Tasting Note

Bright colour, light gold reflections. On the nose there's an immediately appealing aroma of citrus, ripe green apple and dried apricot with good intensity and complexity from the brief oak ageing. It is elegant on the palate, and there's a layered texture offering volume to the concentrated fruit, leading to a flavoursome, fresh finish with lingering minerality. 

Try this with a creamy prawn pasta, vegetable risotto or goats cheese Bleu de Bresse, Comté, Beaufort, and Gruyère.

"Wonderfully fresh and complex Chardonnay from one of our favourite Burgundian appellations. The wines are gorgeously, crisp, fresh, pure, crystalline, minerally, concentrated and intensely flavoured, and are highly recommended. I'd enjoy this with a grilled mackeral."

Based just outside the village of Davayé, Richard and Stéphane Martin took over from their father in the early 1990s. What was a 6.5-hectare domaine has now grown to some 25 hectares, spread over 52 individual parcels – nearly all surrounding their modern winery in the commune of Davayé. Since 2006, they have been totally organic and are now certified as such. The Saint Véran Classique is from 40 separate parcels around the village, with an average age of 45 years, planted on Jurassic limestone and clay soils. Elevage is for 10 months in mainly stainless steel with a small amount of oak barrels.
