Tasting Note
Crafted in the ancestral method from organically grown grapes in the foothills of the Pyrenees, this unfiltered, undisgorged rosé bubbles with freshness, floral notes and raw energy. A vivid expression of the South of France, made with the lightest possible touch on the land. Pale pink and gently cloudy in the glass, this pét-nat offers aromas of wildflowers, soft red fruits and a hint of citrus peel. The palate is clean, lively and dry, with fine bubbles and subtle texture from the lees. Pure, zippy and incredibly moreish.

- Goat’s cheese crostini with honey and thyme
- Vietnamese rice paper rolls with lime and mint
- Grilled peaches with prosciutto (or a vegan version with smoked tofu)

Pierre & Antonin is the brainchild of two friends from winemaking families who met in a New York wine bar and decided to reimagine the future of Languedoc wine. With vineyards near Carcassonne and a deep commitment to biodiversity and resistant grape varieties, they are pushing boundaries in sustainable, low-intervention winemaking — with joy and integrity in every bottle.
How it’s made:
- Organically grown resistant grape varieties planted in 2022 on the Domaine de Stricou estate
- Single (ancestral) fermentation using wild yeasts only
- Fermentation started in stainless steel, paused via cooling, then resumed in bottle
- No sulphites added, no dosage, no disgorgement — lees left in suspension
- Eco-conscious packaging using lightweight bottles, local cork, no aluminium
