A powerful yet elegant Cabernet Sauvignon from the pristine Mount Barker region. 

Tasting Note

Dark purple in the glass with an inviting bouquet of cool mint, cassis, and warm cedar oak. The palate is generous and brooding, packed with blackcurrant, ripe plums, chocolate, and mocha, all wrapped in supple tannins and firm acidity. Long and complex, with a polished finish that lingers beautifully. A brilliant choice for hearty roasts or a special occasion dinner.

Clandestine Vineyards is the creation of Nick and Trudy Stacy, wine industry veterans with over 30 years of experience and deep-rooted relationships with Australia’s best growers. Unbound by a single region or style, they source exceptional fruit from hard-to-access vineyards in Margaret River, Mount Barker, Adelaide Hills, and McLaren Vale. Their philosophy is simple: find the best fruit, pair it with the perfect winemaker, and let the wine speak for itself.

How it’s made:

  • 100% Cabernet Sauvignon from Landsdale Vineyard, Mount Barker (planted 1996, ironstone gravel/loam soils)
  • Pesticide and herbicide-free vineyard practices
  • Machine harvested, 10 days fermentation on skins in open fermenters
  • Hand-plunged twice daily during ferment, then reduced as tannins softened
  • Pressed to tank, then matured 16 months in seasoned French oak barriques
  • Minimal filtration, vegan fined, minimal sulphur at bottling
